When light enters through the pinhole camera it was projected into the paper, like a lens. The image comes out backwards so the light is flipped.
A solargraph has odd colors because finely divided metallic silver growing on silver halide grains form after being exposed to the light after a while. Afterwards you do not develop your picture, you just simply scan it.
